Preparing for the 4th of July

Just a week away, and the flags need to get ready to fly and the menus to be planned. Thinking green pea salad for the cookout, and perhaps, just perhaps some raspberries will be ready?  No, probably not, but hopeful.

Our country is SO BLESSED!  We have a God that is ever present,  and waiting for us to call on Him.

So many have prayed for decades concerning the sanctity of human life, and how to protect the preborn.  We've come alongside and provided  care for  women who've needed help with pregnancies and help with their children.  The next step is to continue to love.  Are you ready to be available?   There will be new challenges and new things to do as the states settle into how they will deal with these things.  Pray as to what He is calling you to do.

The garden is coming along.  It's just a different year. the strawberries were 'iffy' and the yellow transparent apple tree has not an apple in sight...thankful that last year was an apple year!

Garden in the foreground, ancient apple tree to the left, grapevine to the left of the little building.  The vine was a 1-leaf stub coming out of the ground just a few years back.  We were new here, and 'found' it in the area behind where we were going to garden...Sometimes God just amazes me!

My recipe 'find' last week was one written inside the back cover of this old Joy of Cooking I thrifted over 30 years ago.  A favorite all-time find!  The recipe was called Sunshine Cake, though not the same as several I'd known of.

The penciled recipe was from Ethel.  God bless her.

SUNSHINE CAKE

4 egg whites beaten in a stand mixer. Add 1/2 t. vanilla.  Set aside in another large bowl.

4 egg yolks, slightly beaten in the mixer, with 1  c. sugar gradually added til thick and lemon colored.

Take the whipped whites and fold in yolk mixture, then fold in 1 c. flour, 1 T. at a time.

Bake in a greased 9" tube pan,     350* 30 min.

I know, it sounds iffy, but, oh my, its quite good.  Perfect for a sweetened strawberry topping, or just a snacking cake.   You could even frost it?!💖

Plain Jane,  (plain Ethel??), but yummy!   Yes, there is no baking powder..
What are you doing  to celebrate  Independence Day?      D.
