Tomatoes and fall
Can I get a shout-out for tomatoes?! Yes, thankful to be able to can and freeze some tomato-based products, but even happier to be able to use them fresh. Stocked away sauce, soup, paste, juice, sauteed,...you get the drift...
This week we had a Tomato Galette. Sort of an open-faced flat pie?
Assorted slice tomatoes, sprinkled with salt, and placed between paper towel layers
to absorb some moisture.
Next you need a crust...rolled out dough on parchment paper, one sheet of pie crust is perfect.
Slide onto thin cookie sheet or pizza pan, sprinkle with 2 oz. of grated cheese. (I used some odds and ends), but Sharp is good. Top with fresh (or dried basil). We grow lemon scented basil, its perfect with anything tomato.
Now put those paper toweled drained tomatoes on top. Sprinkle with s&p.
Bake 400* about 30 min. (til crust is browned at edges and bottom).
It is a lovely easy supper. A kind of vegetable pie. No, not peach, or apple, but the method can be easily changed for a fruited item. Just add a thickener, sugar, and appropriate spices to the fruit before baking.
My theory is the more we eat fresh, the fewer tomatoes will have to be put up....right??
It's September! Some everyday kitchen items are being sorted out and replaced with fall things. Does that make you as happy as it makes me?? Well, not for my things, but that we can turn the corner on the hottest days and look forward to this next season. (I know, it's 'crazy all around everywhere', but settling into traditions, trusting our Saviour, and keeping our family close and in prayer, is always the best comfort there is). We connect with ones we love, keep the scriptures close in our heart, read His Word often, and do the next things that make sense to us. Yes, even putting up fall decorations. I'm working on setting the kitchen 'right' then gradually, another area or two. (It was my reward for cleaning my white stove top. Let's just say it took WAY LONGER than I planned). My hands are still sore from the scrubbing... Til later, D.
